Questo è un dolce casalingo, senza pretese. All’apparenza semplice, anzi, imperfetto. E’ un dolce che se ne frega dell’aspetto esteriore, lui il buono ce l’ha dentro. Al primo morso, rivela tanti sapori diversi ma ben abbinati l’uno con l’altro, tutti delicati, nessuno troppo invadente. E’ il classico comfort food, quello che mangi a cucchiaiate sul divano di casa tua, in pigiama, senza pensieri. Quel dolce che non pensavi, ma è proprio, semplicemente, buonissimo.
Questo dolce ho voluto preparare per descrivere ciò che Bloggalline significa per me, dopo la serata del 2 ottobre a Milano.
E siccome quello dei dolci è il linguaggio che mi si addice di più, non so descriverlo con altre parole.
Del resto non importa, perchè so che loro capiranno.
CRUMBLE DI PERE CONFERENCE (in tegamino deluxe)
Dose per due persone.
INGREDIENTI PER IL RIPIENO:
- 300 gr di pere confrence, sbucciate e tagliate a pezzettoni
- 15 gr. zucchero di canna
- i semi di una bacca di vaniglia
- un pizzico di scorza di arancia
PER IL CRUMBLE
- 60 gr. burro
- 90 gr. farina
- 15 gr. cocco rapé
- 50 gr. zucchero di canna
- (i filamenti più grandi dell’interno della bacca di vaniglia, se ce ne sono)
- un pizzico di sale
PER LA CREMA
- 70 gr. panna (più un goccio per ammorbidire il mascarpone)
- 30 gr. mascarpone
- 10 gr. zucchero a velo
Preriscaldate il forno a 180° C. In una ciotola, mescolate delicatamente le pere con gli aromi e lasciate da parte.
Preparate il crumble, versando in una ciotola la farina, il cocco, lo zucchero, il sale e la vaniglia. Aggiungete il burro freddo di frigo tagliato a cubetti e cominciate a lavorare con la punta delle dita fino ad ottenere delle grosse briciole. Versate le pere sul fondo di una piccola pirofila, poi distribuite il crumble fino a coprirle tutte, in questo modo:
e infornate per una quindicina di minuti, o finchè non raggiunga il bel colore dorato. Controllate che le pere siano ben morbide prima di sfornare.
Intanto, preparate la crema. Ammorbidite il mascarpone con un goccio di panna liquida e incorporateci il resto della panna semi montata con l’aiuto di una spatola, cercando di mescolare il meno possibile per evitare che la crema si separi. Questo accade per via dell’alto contenuto di grassi del mascarpone, quindi mescolatelo sempre il meno possibile.
Quando il crumble è ben dorato, sfornate, guarnitelo con una bella cucchiaiata di crema e ……godetevelo! 🙂

This is a home style dessert. It is simple, imperfect, not really pretty..it is just plain and simple GOOD comfort food. So make it, put your pyjamas on, grab a spoon and eat it on the couch, while watching a movie with your other half of the apple, with a friend, or whoever makes you happy!
CONFERENCE PEAR CRUBLE (recipe for 2 people)
For the filling:
- 300 gr conference pears, peeled and cut in chunky pieces
- 15 gr. brown sugar
- the seeds of 1 vanilla pod
- a pinch of orange zest, finely grated
For the crumble:
- 60 gr. butter
- 90 gr. all purpose flour
- 15 gr. grated coconut
- 50 gr. brown sugar
- a pinch of salt
- put in also the bigger bits that come off when you scrape the vanilla pod 🙂
For the cream:
- 70 gr. soft whipped cream (plus a little to make the mascarpone soft)
- 30 gr. mascarpone cheese
- 10 gr.icing sugar
Preheat the oven at 180° C. In a bowl, mix delicately the pears with the sugar and spices and leave on a side.
Prepare the crumble by mixing all the dry ingredients in a bowl, then add the butter very cold and cut into cubes and start mixing using only the tip of your fingers, until you get a crumbly mix. Pour the pears on a small oven dish a cover them with the crumble.
Bake for about 15 minutes or until nice and gold colour. Always check that the pears are soft before removing it from the oven.
In the mean time make the cream. Soften the mascarpone up with some liquid cream and then mix to the whipped cream, using a spatula. Try mixing the mascarpone as little as possible, to avoid splitting the cream. This tends to happen with mascarpone cheese, due to its high fat content, so always stir it as little as possible.
Scoop a generous amount of cream on your crumble and dig in!
